At HOT NOW, we don't make pizza... we make history.
We're not here to make "just another pizza." We're here to raise the temperature, break the mold, and prove that pizza can be pure madness and perfection. At HOT NOW, we don't follow recipes; we create them, reinvent them, and push them to the limit.
It all began in May 2018, in the heart of Chueca, where we opened our doors with a clear mission: to revolutionize the way we understand pizza in Madrid. Our dining room, designed so that the magic happens in full view, revolves around a large table made using the Japanese shou sugi ban technique. Here, every detail is thought out to create an atmosphere that combines a chic touch with a relaxed vibe that invites unpretentious enjoyment.
Creating the ideal pizza wasn't a matter of luck, but of patience, testing, and, well... a few secrets we can't share. What we can tell you is that our dough ferments for 48 hours, evolving until it reaches its perfect point. Fire rules, and our ovens roar at 400°C, achieving a baking time that defies all expectations in just 90 seconds.
But once we mastered the technique, a question arose: Why make just another pizza when we can create something unique?
That's when our chef Rafa Bergamo and master pizzaiolo Roberto Borghesi poured all their passion and knowledge into bringing our signature pizzas to life. The result: authentic masterpieces that have won the hearts (and stomachs) of Madrid residents.
Proof? Our legendary La Pistacho. Not only has it been a favorite since day one, but in 2022 it was recognized as THE BEST PIZZA IN SPAIN. 🔥🍕
